Recipe: Easy ‘Perfect pot roast’ from The Pioneer Woman

We’ve been big fans of The Pioneer Woman for several years now (we even waited in line several hours to get her to sign her cookbook last year — see photo below).

Her site offers great stories of life on her Oklahoma cattle ranch as well as great, simple, hearty recipes to boot.

This past week, she appeared on Fox & Friends as well as Good Morning America, where she shared her easy peezy pot roast recipe.

She offers a few great tips on her site as well as in the GMA clip:

  • If it seems tough — it’s not overdone — it needs to cook longer. Simply let it keep cooking and go do a few loads of laundry before checking on it again.
  • A pot roast will fall apart with a fork when it’s finished cooking.
  • Keep the recipe simple, chuck roast, carrots, onion and broth.
